Chocolate Fudge Bars

My mum has been making these chocolate fudge bars for me since I was a kid, so it was only natural that I continued making them – I mean they are yummy as hell so why not! The recipe is from the Woman’s Weekly Big Book of Beautiful Biscuits.

  • 1 cup of plain flour
  • ½ a cup of castor sugar
  • 1 cup of desiccated coconut
  • 1 tablespoon of cocoa
  • 185gm of unsalted butter
  • ½ a teaspoon of vanilla essence
    • 1 cup of icing sugar
    • 2 tablespoons of cocoa
    • 30gm of unsalted butter
    • 1 ½ tablespoons of hot water
    • A handful of desiccated coconut


  1. Preheat your oven to 165°C
  2. Grease a 28cm x 18cm lamington tin with butter or cooking oil spray
  3. Sift together flour, cocoa and sugar in a bowl and stir in coconut
  4. Melt the butter in a saucepan or in the microwave, stir in the vanilla essence
  5. Add the butter and vanilla mixture to the dry ingredients and mix well
  6. Press the mixture into the lamington tin
  7. Cook for approximately 20 minutes
  8. Transfer to a wire rack to cool
  9. Once the base is cooled spread over the icing mixture (see directions below)
  10. Sprinkle the desiccated coconut over the top of the icing
  11. Allow the icing to harden, then cut into slices and store in an airtight container


  1. Sift together the icing sugar and cocoa
  2. Add the butter to the hot water and allow the butter to dissolve
  3. Add the water mixture to the dry ingredients
  4. Mix until the icing is smooth and glossy

These fudge bars are very moreish.
